Chef Thomas Odermatt is a third-generation Swiss butcher and the CEO and Founder of Butcher’s Bone Broth. Chef Odermatt follows practices from his father (a Metzgermeister or master butcher), such as using the best cuts of free range meats from trusted farms, while also incorporating tried-and-true recipes from his mother. With Butcher’s Bone Broth, Chef Odermatt uses the highest quality ingredients and embraces a culture of slowing down.
Chef Odermatt started out with the Roli Roti food truck in 2002, which grew to a fleet of six trucks in the Bay Area that sling its famed and beloved rotisserie chickens and porchetta sandwiches, feeding thousands of loyal customers every week. With this business, Chef Odermatt saw that people appreciated his take on food — simple yet meticulously made. It inspired him to nourish those who couldn’t stop by the food trucks with Butcher’s Bone Broth, the only fresh bone broth on the market in the U.S. Made with a slim list of ingredients, Butcher’s Bone Broth is delicious sipped on its own, and also provides flavor and up to 13 grams of protein per serving when incorporated into meal preparation.

Our broth is crafted to taste just like homemade — because it practically is! We use only the highest quality ingredients and simmer them low for 18 to 48 hours to extract all the natural collagen and nutrients. We do not recommend consuming our bone broth past the expiration date. Because we use fresh, perishable ingredients and no preservatives, it’s safest to discard any broth that has expired.
The consistency of our bone broth can vary slightly from batch to batch due to natural differences in our ingredients — things like seasonality and animal feed. A gelatinous texture means your broth contains collagen. If your broth is more liquid, it simply means the protein content is made up of different types of proteins, not less nutrition. As long as the flavor is consistent, the benefits are still there—just with a slightly different texture.
