From butcher to brewer to bottle

I am first a farmer who cares about connecting with the land, our animals, and growing and eating quality ingredients. It’s so important to me to keep these almost forgotten techniques alive, tend to our long lasting relationships with farmers, and take no shortcuts with our business and our products.

Our origins

Growing up in his family’s award-winning butcher shop in San Gottardo, Switzerland, Thomas learned his family’s secrets of succulent, tender rotisserie.

From his father, Otto, a ‘Metzgermeister’ or master butcher, he learned the importance of using the right cuts for the right purpose, and of choosing only select, free range meats raised by trusted family farms. From his mother, Maria, he learned the family’s recipes for savory rotisserie, a specialty their shop prepared for customers on Saturdays.

Thomas studied to earn his master’s degree in organic farming in Zürich and moved to the US to continue studies at UC Berkeley.

He became captivated by the local Bay Area gourmet food scene and in 2002 his first food truck (and America’s first gourmet rotisserie food truck) “Roli Roti” was born, all from a desire to create the best rotisserie chicken.



But from the truck Thomas ended up with extra product and bones. His butchery origins showed him that he could use this all (nose to tail) and 13 years later his first retail product was brewed: Butcher’s Bone Broth. An organic fresh bone broth that (like his truck) embodies his approach to feeding others: time, attention, and care to create food that is healthy, delicious, and satisfying.

You can now find our broth in over 10,000 locations nationwide, including top retailers like Costco, Sprouts Farmers Market, Whole Foods, and Publix.

Why does Butcher’s Bone Broth jiggle?

Our broth is crafted to taste just like homemade — because it practically is! We use only the highest quality ingredients and simmer them low for 18 to 48 hours to extract all the natural collagen and nutrients. That collagen is what gives it the broth its signature jiggle when chilled – it’s a sign of a truly rich, well-made bone broth.

Are the cows used for the Butcher’s Bone Broth Organic Beef grass fed?

Yes, we use 100% grass fed and grass finished beef bones in our broth. We use bones from family farms we trust!

Is there added salt to Butcher’s Bone Broth?

No added salt for Butcher’s Bone Broth Organic Beef or Organic Chicken! Any sodium you see on the nutrition label comes naturally from the bones or organic vegetables we use and the cooking. Feel free to season to your taste or enjoy as is!

Can I freeze my bottle of Butcher’s Bone Broth?

Yes, absolutely! Just be sure to freeze before the best by date and use within the year. We suggest freezing the broth in a separate container, like an ice cube tray, for convenient use and to avoid our bottle expanding. When you’re ready to use it, thaw the broth in the refrigerator and enjoy it within 5 to 7 days!

Do you offer a more sustainable option than plastic bottles?

We’re always exploring more eco-friendly packaging options! Our current bottles are HDPE plastic and allow for more stores to carry our items. Sustainability is important to us, and we’re actively working toward alternatives. Stay tuned as we continue improving our packaging with a healthy planet in mind.

Is Butcher’s Bone Broth safe to feed my pets?

Yes, Butcher’s Bone Broth Organic Beef, Organic Chicken, and Organic Turkey are safe for pets. These broths contain no salts, alliums, or additives – making it a pet-friendly option many animals enjoy. We love these four-legged friends!

Can I consume a Butcher’s Bone Broth bottle after the expiration date?

We do not recommend consuming our bone broth past the expiration date. Because we use fresh, perishable ingredients and no preservatives, it’s safest to discard any broth that has expired.

Why is my Butcher’s Bone Broth sometimes more gelatinous or more liquid than other times?

The consistency of our bone broth can vary slightly from batch to batch due to natural differences in our ingredients — things like seasonality and animal feed. A gelatinous texture means your broth contains collagen. If your broth is more liquid, it simply means the protein content is made up of different types of proteins, not less nutrition. As long as the flavor is consistent, the benefits are still there—just with a slightly different texture.

Is Butcher’s Bone Broth free from common allergens?

Yes! Our founder, Thomas Odermatt, has severe shellfish allergies himself – so ensuring our products are safe for as many people as possible is a top priority. That’s why Butcher’s Bone Broth products are free from all nine major allergens: Milk, Eggs, Fish, Shellfish, Tree Nuts, Peanuts, Wheat, Soybeans, and Sesame.
